Why a pizza bench is not a salad bench

They look alike and they are not. A pizza prep fridge has a deeper top to take a full row of topping pans, a raised rail so the pans sit above the work surface instead of in it, and a bench deep enough to stretch and dress a base in front of them. A salad bench puts the pans in the top and leaves you a narrow strip to work on — fine for sandwiches, useless for a 14-inch base.

Sizing by pans across the front

Count topping pans first. This range runs 735 mm to 2,393 mm wide with 180 L to 880 L underneath, the middle of it a 542 L bench at about 1.7 m. Two-door units suit a single pizzaiolo; three-door and over-shelf models are for a two-person line where one dresses and the other loads the oven.

Granite tops and over-shelves

A granite or stone work surface stays cool and does not drag on dough the way stainless does — worth it if you hand-stretch. An over-shelf model puts a second tier of pans above the rail, which nearly doubles the toppings within reach without taking another millimetre of floor.

Where it sits

These run hot and hard: usually beside a deck oven, with the lid open through the whole service. Leave the ventilation clearance the plate asks for, and if the shop gets above 32 °C check the climate class before you order — a bench that cannot hold on a January night is a food-safety problem, not an inconvenience.
