Gelato and ice cream are not held at the same temperature

A gelato display freezer runs warmer than a storage freezer — the scooping cabinets here are rated −22 °C to −12 °C depending on model — because gelato is served soft enough to scoop and paddle. Hold it at true storage temperature and it goes rock hard; hold ice cream at gelato temperature and it slumps. If you sell both, the cabinet has to be specified for the one you serve most.

Pans decide the size, not litres

These cabinets are sized in pans across the front, and the range runs 900 mm to 2,310 mm wide with the middle of it a 400 L cabinet at about 1.3 m. Work backwards from how many flavours you want visible at once, then check the width fits the shopfront.

Ventilated or static, and where it stands

Scooping cabinets are worked hard with the lid open, so airflow and a sensible standing position away from a doorway or a west-facing window matter more than the badge on the front. Check the climate class if the shop gets hot.
