What a salamander is for

A salamander grill is overhead radiant heat with an adjustable shelf under it: you slide the plate in, melt the cheese, brown the top, pull it out. It is a finishing tool, not a cooking one — that is why it lives above or beside the range rather than in the middle of it. Gas models hit temperature fast and hold it through service; electric models suit a bench where there is no gas.

Fixed shelf or rise-and-fall

A rise-and-fall salamander lets you move the food towards or away from the element, which is the difference between browning a gratin and burning it. A fixed-shelf unit is cheaper and fine if everything you put under it is the same thickness. If your menu varies, pay for the adjustment.

Toasters: conveyor or slot

A commercial toaster comes in two shapes. Conveyor toasters run continuously and are rated in slices per hour — that is the number to match to your breakfast rush. Slot and contact toasters are cheaper, take less bench, and suit a café doing tens rather than hundreds. A griller-toaster does both jobs in one cabinet: open top for melting, slots or a plate for toasting.

Bench space is the real constraint

These all sit on a counter that is already full. Measure what you can actually give up, and check the clearance above — a salamander needs air and a toaster needs somewhere for the heat to go. Other counter-top cooking gear is on our commercial benchtop cooking equipment page.
