GSTContact us for a better dealA commercial pasta cooker is a boiler with a basket station, and the spec that matters is how fast it comes back to a rolling boil after you drop cold pasta in. A domestic-grade pot on a burner will not do it at volume — by the third order the water is off the boil and the pasta is gluey. Output rating, not tank size, is the number to compare.
Count the portions you plate at once and buy that many baskets plus one. Separate baskets also keep gluten-free pasta out of the same water, which is the difference between offering it and not being able to.
Benchtop units suit a café adding a pasta dish; a dedicated pasta bar wants floor-standing with a bigger tank and an auto-fill. Gas recovers faster; electric is simpler to install where there is no gas at the bench.
Starch builds up fast. A cooker with a proper drain valve and an easy-clean tank gets emptied every day; one without gets topped up instead, and the water turns to glue. Check the drain before you check the badge.
Pasta cookers usually sit in a modular run with burners and griddles — see commercial cooktops, griddles and chargrills for the units that line up beside them.
