When you do not want refrigeration

Bread, croissants, muffins, biscuits and most slices are worse for being chilled — refrigeration dries crumb out and stales bread faster than a counter does. An ambient display cabinet keeps the product visible and protected without a compressor, which also means no power bill, no condenser to clean and nothing to service.

Sizing

The range runs 361 mm to 1,800 mm wide and 48 L to 830 L, with the middle of it a 318 L case at 900 mm. Counter-top cases suit a single bakery bay; the larger floor cabinets work as a self-serve bread run.

Where the line is drawn

Anything with cream, custard, fresh fruit or a dairy filling has to be refrigerated — that is a different cabinet, and you want our cake display fridges. A useful rule: if it would be unsafe on the counter for four hours, it does not belong in an ambient case.
