Sushi needs a narrower band than a normal display

A sushi display fridge is specified differently from a cake or deli cabinet: too cold and the rice goes hard and loses texture, too warm and raw fish is outside food-safe holding. The cabinets here run roughly 0 °C to 12 °C depending on model — check the rated band, and check how tightly the unit holds it, because fluctuation is what ruins rice.

Sizing

The range runs 900 mm to 1,800 mm wide and 20 L to 132 L — the volumes look small because a sushi case is a shallow single-deck showcase, not a stacked cabinet. Size it by how many trays sit across the front.

Counter position
